John,
When a backup is saved there is also a backup made of your Log4OM configuration, its file name starts with the date and time as in the example below

20150921062038_config.xml

Find the latest one of these backup files and edit out the date so that you end up with a file as below

config.xml

Now copy that file to your C:\Users\YOU USER NAME\AppData\Roaming\LogOM folder and let it overwrite the existing file

Open Log4OM and all of your settings should have been restored

If your logbook has not automatically been selected just go to File/open database - navigate to the location of your SQLite database and select it

Layout is saved into some xml files ending as "_user.xml" in the settings folder that amends the official ones.
We didn't save those files in configuration backups, because those informations are easily fixable.
Can be an option in future to add those into the backup folder (but could be a waste of space)...
